Waldorf-Astoria Red Velvet Christmas Cake Recipe (Serves 12)
Cake Ingredients
½ Cup Shortening
1-½ Cup Sugar
2 Eggs
2 oz. Red Food Coloring
2 Tbsp. (heaping) cocoa
1 Cup Buttermilk
2-¼ Cup Swan’s Down Cake Flour
1 Tsp. Salt
1 Tsp. Vanilla
1 Tsp. Baking Soda
1 Tsp. Vinegar
Buttercream Frosting
3 Tbsp. Flour
1 Cup Milk
1 Cup Sugar
1 Tsp. Vanilla
1 Cup Butter
Directions – Cake
- Preheat Oven to 350 F
- In a large mixing bowl, cream shortening, sugar, and eggs
- Make a paste of food coloring and cocoa; add the food color paste to the creamed mixture
- Add buttermilk, alternating with the flour and salt
- Add vanilla
- Add baking soda to the vinegar, and blend into the batter
- Pour cake mixture in to 3 greased and floured 8” cake pans.
- Bake at 350 degrees F for 24-30 mins
Directions – Frosting
- Add milk to flour slowly to avoid lumps
- Cook flour and milk until very thick, stirring constantly, take off heat and let cool completely
- Cream sugar, butter, and vanilla until fluffy and add to cooked mixture
- Beat on high speed until very fluffy (it should look and taste like whipped cream).
Assembly
- Cut the cakes in to 2 layers (you should have six layers)
- Frost each layer with the frosting
- Decorate top festive for Christmas
