In looking back at the year that just passed, it’s clear that the landscape of health care foodservice is changing.   Hospitals are expanding services to provide more options to employees and visitors who patronize retail food sales outlets.   Exciting options like food trucks, catering, stand-alone coffee kiosks, and in-house full-service restaurants  provide choices for staffers who frequently dine at work.   To engage the surrounding community, hospitals are hosting cooking demonstrations,  nutrition programs, and organic gardens.  Half of hospitals are feeding a greater number of patients, and hospitals are doing it with more patient choices,  greater employee productivity,  and reduced waste.

Hospital Consumer Assessment of Healthcare Providers and Systems (HCAHPS) surveys have given patients and providers a platform to voice concerns, priorities, and needs.  HCAHPS survey have driven recent changes in hospital foodservice programs.  Nearly half of hospitals who responded to the survey reported that they made changes to their programs or upgraded their menus as a result of these surveys.   In hospitals that spend more than $5 million on food and beverages annually, 70% expect to use more local food.  Hospitals that spend less than $500,000 on food and beverages annually are more likely to increase the amount of scratch cooking as a way to increase the appeal of food while saving money.   Of the hospitals surveyed, nearly half reported having patient room service in place.  The increased importance of nutrition in patient outcomes, and increasing competition in the health care foodservice market makes automation the key to providing attractive patient meal programs that improve service while keeping an eye on the bottom line.
