VST Interactive Tool Kit - Duplicate Tray Scenario - Cost Savings Analysis
All Foodservice and Nutrition Care Managers recognize that the delivery of a patient's tray which is in accordance with the patient's current diet order is extremely important.  This is from both the clinical nutrition care perspective and from the viewpoint of needing to control patient meal costs.  Many times diet orders change just before, or right at, meal times.  If the Food and Nutrition Services staff is not aware of a change prior to the assembly of a patient's tray, a duplicate tray must be assembled and the first tray discarded.

This document assists in calculating the cost of these duplicate trays and the net savings realized as a result of using automation to immediately enter diet order changes and print an "up-to-the-moment" correct trayline card for patients with changed diet orders.
